INGREDIENTS

  • 1 container (142g 3 5oz)   of Fresh Attitude prewashed spring mix
  • 2                                            hard-boiled eggs, shelled, quartered
  • 1                                            can of tuna, drained, and crumbled
  • 1                                            apple, peeled, and diced
  • 1/2 cup      125ml               blueberries or grapes cut in half
  • 1/2 cup      125ml               grape tomatoes
  • 1/3 cup      85ml                feta cheese, crumbled
  • 1/3 cup      85ml                cheddar cheese, diced
  • 1/3 cup      85ml                dried cranberries
  • 1/4 cup      60ml                pumpkin seeds
  • Extra virgin olive oil, to taste
  • Balsamic vinegar, to taste
  • Salt and pepper, to taste

METHOD

1. In a large bowl, put the Fresh Attitude Spring Mix and display all other ingredients in small bowls except for the olive oil, balsamic vinegar, salt, and pepper.
2. Serve the Fresh Attitude Spring Mix in plates and let each member of the family add their choice of toppings. The possibilities are endless!
3. In each plate, add the olive oil, balsamic vinegar, salt and pepper to taste.

TIPS

For a vegan dish, replace animal protein by tofu and legumes like edamame and chickpeas.
